Crafting Your Own Kefir Water
Creating your own kefir water at home is a rewarding and straightforward journey. Start by acquiring water kefir grains, which can often be obtained from fellow fermenters or specialty stores. With these living cultures in hand, all you need is sugar water, fruit juice, or coconut water to kick-start the fermentation process.
Once combined, the magic of fermentation begins. After a couple of days, you'll be greeted with a bubbly, slightly tangy elixir that can be enjoyed as is or flavored with a myriad of fruits, herbs, or spices to suit your palate.

Homemade Water Kefir Recipe
Ingredients:
1/4 cup Water Kefir Grains
1/4 cup sugar per quart of water
Water (free of chlorine)
Equipment:
Half-gallon glass jar
Non-metal stirring utensil
Tight-weave cloth or coffee filter
Rubber band
Instructions:
Prepare the Sugar Solution:
In a glass jar, dissolve sugar in water. Stir until the sugar is completely dissolved.
Combine Ingredients:
Place the water kefir grains in the half-gallon glass jar. Pour the sugar solution into the jar with the water kefir grains.
Add Water:
Fill the jar almost to the top with water, leaving some space to allow for fermentation and expansion. Ensure that the water used is free of chlorine, as it will negatively impact the fermentation process.
Fermentation:
Cover the jar with a tight-weave cloth or coffee filter and secure it with a rubber band. This will allow airflow while preventing contaminants from entering. Place the jar in a warm, dark place, ideally at 75-85°F, to ferment for 24-48 hours.
Strain and Bottle:
After 24-48 hours, strain the water kefir grains from the liquid using a non-metal stirring utensil. The liquid is now your water kefir, ready to be bottled.
Second Fermentation (Optional):
If desired, the bottled water kefir can undergo a second fermentation for added carbonation and flavor. This can be achieved by adding 1/3 of the swing top fermentation jar with fruit, juice, or other flavorings to the bottles topped with the strained water kefir before sealing them and allowing them to ferment at room temperature for 1-3 days.
Refrigerate and Enjoy:
Once the second fermentation is complete or if you prefer still water kefir, refrigerate the bottles. Enjoy your homemade water kefir within 2 weeks for optimal flavor and carbonation.
Tips and Notes:
Always use non-metal utensils and containers when handling water kefir to prevent contamination.
The strained water kefir grains can be immediately reused to start a new batch of water kefir.
Rinse the grains with water and store in the fridge fully submerged in water if you would like the grains to go dormant.
Water kefir ferments quickly! Be sure to burp your bottles to check on the ferment daily. If you think it might have over fermented open the bottle carefully outside.
